I stole this recipe from my sister, but I did so I could share it with all of you, so don’t tell anyone.
My sister is one of those people who lives unapologetically. She is the book definition of “vibrant”: when she enters the room, the energy immediately goes up, people instantaneously smile, and the fun factor increases exponentially. She’s a Party Unto Herself. Especially if she comes bearing The Amazing Avocado Dip.
It’s really simple, as most wonderful things are, and it’s also very easy to make. This stuff will be inhaled at an astonishing rate, so plan to double this recipe, and hide the second batch in the fridge for yourself later. Trust me.
Gather the following:

2 ripe avocados
1 can pickled jalapenos
1 8-oz. package Philadelphia Cream Cheese, softened
Dash salt
(Optional Fun Additions)
Cilantro
Fresh Lime Juice
Now, since my sister is The Life of the Party, and since making this smooth stuff requires the use of a Noisy Blender, Loud and Spicy Music is required (read: Santana).
You know what song. Take your shoes of, mija, and turn it up:

Get out the blender, a sharp knife and a cutting board. Peel and pit the avocados, and put the meat in the blender. Add the softened cream cheese. The jalapenos are next: take two, (if your crowd likes it mild; more if they’re adventurous) remove the seeds and add to blender. If your peeps like it spicier, leave the seeds, or add more peppers. Whatever; it’s your dip, just ease into the heat. Add about two tablespoons of the juice from the can of jalapenos, a dash of salt, and if you want, cilantro and lime juice to taste.
Blend your fool head off. (For creamier dip, *slowly* add in more juice.) Serve immediately with tortilla chips, crackers. or fresh veggies. We also dip taquitos and quesadillas in it, and honestly, anything else on the premises that could conceivably be considered A Dip Vehicle. Amazing Avocado Dip will keep for a day or two in the fridge, but, trust me, it won’t last that long. This batch was gone before I could take a pretty picture of it, so you’ll have to settle for this one.
